Patchwork-Reb's Right-On Pancakes (Rebecca)

Patchwork- Right-On Pancakes

1 1/2 cups oatmeal
3/4 cup milk
1 egg
2 tablespoons oil
2 tablespoons brown sugar
1 tablespoons baking powder
1/4 teaspoon salt
3 bananas

To make oat flour, put oatmeal into blender container. Cover and process at grind until the consistency of flour. Remove from container. Put all ingredients into blender container in order listed above, with the newly made oat flour being last. Cover and process at blend until smooth. Allow to stand for 5 minutes before using. Pour onto preheated griddle over medium high heat. Put banana slices on top of newly poured batter can cook like a regular pancake.
Yield: 12-4 inch pancakes.
These pancakes are especially yummy with butter and warmed maple syrup.
I would recommend that you double this recipe for 4 or more people.
